Low carb mini cheesecakes are macro friendly & perfect for get togethers and parties. These are only 3 ingredients, no bake, and so easy to make!

So the only thing I have been craving lately is… cheesecake. But cheesecake isn’t really the best when you’re trying to look good in a swimsuit. Thankfully, we were able to come up with a delish alternative.

My kids and husband ask for this dessert all the time! The best part is it’s literally takes seconds to make, is low carb, andddd it’s high protein!

The recipe makes 5 mini cheesecakes, which is perfect for just a random dessert during the week, but you could easily double it and bring it to a party or get together.

I love this healthier dessert for Valentine’s Day and Thanksgiving.

One Quick Tip:

Definitely go with chopped fresh fruit over preserves/ pie filling to avoid added sugars. We use chopped strawberries. Any other berry would be great too. But if I’m being completely honest, I almost prefer it without any berries at all. Just crunchy crushed honey graham crackers 😉

Which brands to use:

Everyone has their favorite brands. We personally used Dannon nonfat Greek Yogurt and Jell-O Brand Sugar-Free Cheesecake Instant Pudding Mix. Keep in mind that the calorie count listed below the recipe is based off of the brands we used, so your calories may vary if you use something different.

If you like this recipe, you may also like our healthy fruit dip. This recipe also gets its flavor from a sugar free instant pudding mix and is delish on its own as well as paired with fruit. I could eat it by the spoonful (and I have). So it’s definitely another go-to party fave for us when we are trying to stick to our diets.

Low Carb Mini Cheesecakes

These no-bake cheesecakes are perfectly diet friendly! Make them for your next get together or the next time you're craving something sweet!

Ingredients

  • 1 1/2 cups plain, nonfat Greek Yogurt
  • 1 packet of Sugar Free, Fat Free Cheesecake Flavored Pudding Mix
  • 1 cup lite Cool Whip
  • 4 Strawberries, diced
  • 1 cup crushed honey graham crackers

Instructions

  1. Beat all ingredients until smooth.
  2. Layer each cup with 1/8 cup graham cracker crumbs, a couple spoonfuls of cheesecake mixture, strawberries, more cheesecake mixture and then top with remaining graham cracker crumbs.
  3. Refrigerate for 2 hours and enjoy.

Notes

Calorie count is an approximation based on the brands we used. Also, a prior version of this recipe didn't include graham crackers. I updated the recipe and pictures to include them because we like it better this way. You can leave them out and have a lower carb count if you'd like.

I just found this recipe, but I'm so excited to try this! I'm pregnant with Gestational Diabetes, so I have to limit my carbs (20ish grams is perfect for a snack for me!). I might try swapping in some cream cheese, but I'm really excited to try out this recipe this weekend. Thanks!
