The star of this strawberry chia seed jam is definitely the chia seed. Chia Seeds are loaded with omega-3s, plus they’re high in protein and fiber! They are such a great super food to include in your diet.

My 4 year old has really been loving strawberry jam on his toast lately which made me curious about healthier options. The “healthier” jams at the store are super expensive, which I hated. I knew we had tons of strawberries in our freezer from a sale last week and this gave me the perfect opportunity to use them!

Strawberry chia seed jam…

…is surprisingly easy to make. It’s only 4 ingredients and doesn’t take any special culinary skills. For some reason I always thought homemade jam was a super involved process–maybe the normal way is? I’m not sure, but when you use chia seeds as the thickener, it’s super easy.

First, put your strawberries in a small pot over medium heat. I just tossed mine in there while they were still frozen and it worked great.

Next, stir the strawberries and break them up. Feel free to mash your strawberries with a Potato Masher or the back of a spoon until you get the desired consistency. I like mine a little chunky, but not much. This process takes about 5 minutes.

Next, remove from heat and stir in the juice from 1/2 lemon and honey to desired sweetness. We typically like between 2-3 tbs. Then all you have to do is stir in the chia seeds and you’re done! This jam will thicken up in the next 5 minutes and then continue to thicken in the fridge!

Seriously guys, this is beyond delicious. I was so surprised! You can definitely add more honey for a sweeter jam, but 3 tbs worked great for us.

Our strawberries were surprisingly sweet just on their own, possibly due to it being strawberry season? Idk, but I’m hooked on this! I have a bunch of ripe mangoes that I want to try next, but I’m not sure. Would that be weird? I’ve never branched out of the strawberry flavored jam before but I’m curious!

Ingredients

  • 2 cups strawberries, chopped, stems removed
  • 3 tbs honey (more to taste)
  • 1 tsp lemon juice
  • 2 tbs chia seeds

Instructions

  1. In a small pot, stir strawberries over medium heat.
  2. Continue to stir and mash with the back of a spoon until you get your desired syrupy consistency about 5-10 minute.
  3. Remove from heat and stir in honey and lemon juice. Add additional to taste.
  4. Next, stir in 2 tbs chia seeds and let sit.
  5. Once the jam reaches room temp, put in a jar and store in fridge for up to two weeks.
